Almond Flour Protein Pancakes

- 2 cups almond flour
- 1 scoop protein powder
- 3 tsp ground flax or chia seeds
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
- 1 ripe smashed banana
- 1 tsp vanilla
- 4 large eggs (opt for pasture raised)
- 2/3 cup unsweetened nut milk
- You can use coconut oil, ghee or pasture raised butter for cooking
Instructions
- In a medium size bowl, add almond flour, protein powder, ground flax, cinnamon, and salt and mix well with a whisk or a fork.
- Add smashed banana into the dry mixture and stir.
- Add vanilla, eggs and milk. Mix well using a a whisk. if the batter seems too thick, add more milk until it is a consistency that you like.
- Cook the pancakes in a griddle on medium heat with a little coconut oil, ghee or butter.
