Caramelized Leek Turmeric Mustard Vinaigrette
I love leeks in this simple marinade as they are full of vitamins and minerals and in season right now. You can also sub with shallots or onions if you don’t have them. This marinade could also easily work as a salad dressing or protein dressing to elevate your #FUNdamental5 Bowl!

1/4 cup olive oil
2 Tbsp Apple Cider Vinegar
1 Finely chopped, sautéed leek
1 Tbsp mustard (I like grainy mustard)
2 tsp maple syrup
1 tsp turmeric
1/2 tsp ginger
Sea Salt (to taste)
1/8 tsp Cayenne (optional for a bit of a kick)
Instructions
- Sauté leek in olive oil until caramelized
- Add to your favorite 20 oz. Mason Jar or Glass salad jar with the remaining ingredients
- Shake Well
- Sauté your vegetable(s) in the same pan you caramelized the leek and drizzle the vinaigrette over the vegetables
- Store in the fridge for 2-3 days
