Roasted Pears and Brussels

1 1/2 lb. Brussel sprouts, trimmed and halved
3 Tbsp Olive oil
1 tsp sea salt
1/2 tsp freshly ground pepper
2 pears, cored and sliced or coarsely chopped (about 2 cups)
2 tsp orange zest
2 Tbsp fresh squeezed orange juice
2 Tbsp toasted Pine nuts
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with parchment paper. Add Brussel sprouts to pan. Drizzle with olive oil, sprinkle with salt/pepper and toss to coat.
- Roast for approximately 15 minutes. Stir in pears. Roast 10 minutes more or until sprouts are crisp/tender and pears are tender. Sprinkle orange zest and drizzle with orange juice.
- Transfer sprouts and pears to a serving dish. Sprinkle with toasted pine nuts.
