Roasted Roots and Bulbs
Ingredients
Sunchokes
Garlic
Onions
Avocado oil
Salt and pepper
Instructions
- Heat oven to 425 degrees.
- Wash and cut sunchokes.
- Cut stem ends off of garlic and onions but leave skin on.
- Place veggies on a tray covered with baking paper and drizzle with avocado oil.
- Sprinkle with sea salt and pepper.
- Roast for 15 minutes. Flip and roast for another 10-15 minutes. Sunchokes should be soft and brown.
- Pop onions and garlic out of skins.
- Enjoy!!
