Roasted Golden Cauliflower with Coconut Quinoa

Ingredients

Units Scale

2/3 cup Quinoa
2 cups filter water
1/2 cup Coconut Milk
1 Big head of Cauliflower or 2 small
2 tsp Turmeric
2 tsp Cumin
1 tsp Black Sesame Seeds
2 Tbsp Tahini
2 Tbsp Coconut Oil
2 Tbsp Fresh Cilantro

Instructions

  1. Set oven to 400 Degrees
  2. Wash quinoa several times and put it to boil in the coconut milk and water with 1 tsp turmeric for approx. 15 minutes
  3. Wash, cut the cauliflower into small pieces and put on baking sheet with Cumin, rest of Turmeric and coconut oil.  Mix well.
  4. Roast for about 10 minutes-toss in oven and continue roasting for another 10-15 minutes.
  5. When ready, arrange the cauliflower florets on a plate with the quinoa, sprinkle of tahini, cilantro and sesame seeds.
